Delicious Penne With Pomodoro Crudo Recipe

Here is a recipe that came to mind recently when one of my best girl friends asked me to send it to her!  We had this pasta for lunch one day before the wedding, so I always remember that when I have it to eat :)  Great, simple, flavorful pasta recipe that tasts great when served either hot or cold!
Penne With Pomodoro Crudo
From Ladies' Home Journal's "100 Great Pasta Recipes"

Prep Time: 15 minutes plus standing
Cooking Time:  8 to 10 minutes

Ingredients:
  • 2 pounds fresh plum tomatos, diced into 1/4 inch pieces
  • 1/4 cup olive oil
  • 1/4 cup julienned fresh basil (the more basil the better!)
  • 1/4 cup sliced green onions
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 pound penne or mezzani rigati; cooked according to package directions, drained
  • Freshly grated Parmesan cheese
Directions:
1.)  Combine the tomatoes, olive oil, basil, onions, salt, & pepper in a serving bowl.  Let stand for 30 minutes.
2.)  Toss the sauce with the hot pasta.  Serve with grated Parmesan cheese.

Makes 6 servings.
