Penne With Pomodoro Crudo

Prep Time: 15 minutes plus standing
Cooking Time: 8 to 10 minutes
Ingredients:
Directions:
- 2 pounds fresh plum tomatos, diced into 1/4 inch pieces
- 1/4 cup olive oil
- 1/4 cup julienned fresh basil (the more basil the better!)
- 1/4 cup sliced green onions
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 pound penne or mezzani rigati; cooked according to package directions, drained
- Freshly grated Parmesan cheese
1.) Combine the tomatoes, olive oil, basil, onions, salt, & pepper in a serving bowl. Let stand for 30 minutes.
2.) Toss the sauce with the hot pasta. Serve with grated Parmesan cheese.
Makes 6 servings.
